What are the regulations for an airtight wood stove in Ontario?

I can only reply to the insurance portion of your question and am going to assume that you mean insurance rules....
Most insurers will insure a home with a wood stove as long as it is certified (ie ULC or CSA) and that it is properly installed. This means it must have proper clearances, proper chimney, the right building materials around it, and so on.
The woodstove must not be the primary heat source in most cases.
