Occasional use vehicle

I know that you can insure a second driver on a vehicle as an occasional driver. Is it possible to have a vehicle which is occasional use?
For instance if a family have a small sedan used for every day commuting and an SUV that only gets used for camping trips or for towing trailers, boats etc.
