Son is 22 drives his own 2001 Chev under my insurance, while I drove 1993 Acclaim if I buy a 2007 car is he insured under his or does he have to drive my new one?

Since he is the owner of the 2001, most insurers would allow him to be the primary on that vehicle.
When you make the change with your insurer just double check. I'd be surprised if he had to be primary on the new one instead of his car.
