Insurance without owning a car

I don't have my own car, I've been borrowing my girlfriends' car that is insured. I am 37yrs old, I've been trying to get my own insurance quotes but they all require me to own a vehicle so how does it work?

In order to have auto insurance you must have a car.
You can drive your friends car with her permission. Her coverage is in effect and she is responsible for any accident you might have.
If this is a regular occurrence, your friend should talk to her insurer about adding you to her policy.
