My girlfriend is insured on her car, and I am insured under my parents. We don't live together, but I occasionally borrow her car. Is this legal?

Hi Matt, Thanks for asking. Yes it is legal. If it is a regular thing, then you need to be listed on her policy.
And if you have an accident, it could impact both of your rates.
